Ingredients: 2 ounces unsweetened
1/2 cup heavy cream
2 tablespoons butter
2 tablespoons
unsweetened cocoa
1 envelope unflavored
14 packets aspartame
sweetener -- or more if
16 ounces cream cheese --
at room temperature
1 tablespoon vanilla extract
1/2 cup chopped pecans
4 tablespoons no sugar
added peanut butter --
1 dash salt
6 tablespoons wheat bran
-- optional
1 packet artificial sweetener
-- optional
1/2 teaspoon cinnamon

How To Prepare: Prepare a 9" springform
pan by spraying with butter
flavor cooking spray. If
using wheat bran, mix with
additional packet of
sweetener and "flour" the
pan with
it at this point.

In a double boiler over
simmering water, melt
cream and butter together.
Once that's done, stir in
the cocoa and peanut butter
to melt, then sprinkle the
gelatin over all and whisk
in. Let cool for 10 minutes.
Beat everything in a large
bowl until smooth. Fold in
pecans except for 2T.
Scrape into the prepared
pan and smooth the top.
Sprinkle reserved pecans
over top.
Refrigerate for 4 hours or
until completely cooled and
NOTES : Counts for peanut
butter not included in totals.
