4 cups cottage cheese
1 teaspoon baking soda
1 cup heavy cream
How To Prepare:
Put four cups of cottage cheese in a colander. Cover with a cloth and drain for two days at room temperature. Add one teaspoon of baking soda and mix very well. Let set for two hours. Mix in two eggs.
At this point you can add any flavoring you want such as chopped green chiles or pimento. But the cheese is also very good plain or with a bit of salt and pepper. Cook over low heat in a heavy, deep skillet, stirring constantly. When half done, add a cup of heavy cream and cook until you no longer see any bits of cottage cheese. Chill. The cheese will solidify when chilled and have the consistancy of honey at room temperature. This is a rich, flavorful cheese spread that is great on anything or as a side dish.
