Ingredients:
|
3 pounds pork loin roast
it is better with bone, but
boneless is OK
(3 to 6)
1 tablespoon cracked
pepper
2 tablespoons grated
Parmesan cheese
2 teaspoons dried basil
2 teaspoons dried
rosemary -- whole not
crushed
2 teaspoons dried thyme
1/4 teaspoon garlic powder
1/4 teaspoon salt
SAUCE:
Pan drippings
1 1/4 cup heavy cream
1 tablespoon sour cream

How To Prepare:

ROAST:
Pat pork dry with paper
towel. In small bowl,
combine all rub
ingredients well and apply
to all surfaces of the pork
roast. Place roast in a
shallow pan and roast in a
350 degree F. oven for 1 to
1 1/4 hours, until
internal temperature,
measured with a meat
thermometer, registers 155
degrees F.
Remove roast from oven
and let rest for 5-10
minutes before slicing to
serve.
SAUCE:
1. Add pan drippings to
sauce pan. Be sure and get
some of the roasted
rosemary in with the
drippings.
2. Add heavy cream and
sour cream.
3. with a wire whisk,
continually stir sauce until
cream and drippings
mixture have blended.
3. cook over high heat for 5
minutes, then reduce to
medium and simmer
until reduced.
Spoon sauce onto plate.
Place slice of roast on top
of sauce. Dribble a
small amount of sauce over
roast followed by a small
drop of cream.
Garninsh with a pinch of
dried italian seasoning.
