2 lbs beef brisket, or sirloin
2 green onions
2 large knobs old ginger
3/4-1 cup soy sauce
3/4-1 cup rice wine
3-4 T. hot bean paste
How To Prepare:
Blanch the beef, then cut into large pieces. Cut about 8 thick slices of ginger. Heat 1/4 cup oil in pot and fry ginger until fragrant. Add the hot bean paste and fry briefly. Add the soy sauce and beef. Slice the rest of the ginger and add to the pot. Simmer for about 10 mintues then add the rice wine and 1 cup water. Add the green onions. Simmer until beef is very tender. Toward the end add more water until desired broth strength is reached.
