Ingredients: 1 head cauliflower
8 tablespoons butter
1 teaspoon pepper -- up to
1 tablespoon
How To Prepare: Cook 1 head of cauliflower
until very soft.
MASH all the water out of it
through a screen mesh
colander (If you skip
this step you get cauliflower
Add 1 stick butter and
considerable pepper (min 1
teaspoon up to a
tablespoon - careful it goes
from perfect to HOT very
fast). Whip with
mixer or in food processor,
re-heat if necessary.
I have served this at parties
and no one has known they
were not real.

This was great and healthy! I added a tbs sour crm and topped it with cheddar chz and it was great! Even better the second day!

Cons: none

Thanks for the coliander tip! Mine always came out soupy before, now I know how to fix that! I wasn't even tempted by the mashed potatoes at Thanksgiving, especially since I added chedder cheese to the cauliflower Wink Perfect recipe, look forward to making again.
