4 cups shredded zucchini
4 ounces shredded mozzarella cheese -- (1 cup)
4 ounces shredded cheddar cheese -- (1 cup)
2 eggs -- slightly beaten
1 pound Italian sausage or Ground Beef
1/2 cup chopped onion
1 cup prepared Spaghetti or Pizza Sause
1 small Green Pepper -- cut into rings
4 1/2 ounces sliced mushroom -- drained
1/4 cup grated Parmesan cheese -- (1/4 to 1/3)
How To Prepare:
Grease 15x10-inch jelly roll pan. Place zucchini in colander; drain 1 hr, squeezing out moisture.
Heat over to 400 degrees. In large bowlcombine shredded
zuchinni, 1/2C of the mozzerella cheese, 1/2C cheddar cheese and eggs. Spread zuchinni mixture in prepared pan. Bake at 400 degrees for 18-20 minutes or until set.
In medium skillet, brown sausage and onion; drain. Stir
in spaghetti sauce. Spread meat mixture over partially
baked crust. Top with green peppers, mushrooms, remaining
cheeses; sprinkle with Parmesean cheese. Return to oven and bake an additional 8 to 10 minutes or until cheese is melted. 6 to 8 Servings
