16 ounces Mezzetta Mexi-Mix hot-n-spicy -- or other pickled hot cauliflower mix. Drain well and reserve liquid.
8 large green olives
1/4 cup finely chopped onion
1 small roma tomato coursely chopped
How To Prepare:
Put everything except the reserved liquid in a food processor and pulse until it's finely chopped, but not minced. You want recognizable pieces.
Put in a wide mouth jar or a plastic bowl with a tight fitting lid and cover with the reserved juices.
This mix has a hot and salty taste that goes well with fish and chicken -just spoon over the top. Use spooned over a salad to pick up the taste. Mix a few tablespoons into sour cream or plain yogurt for a dip or dressing.
