1 large ripe avocado
1 ripe plum tomato
1 fresh or canned pickled jalapeno pepper
1 tbs. lime or lemon juice
1/4 C. canned chopped green chilies
1 tbs. chopped fresh cilantro *optional*
1/2 tsp. hot red pepper sauce
salt and pepper to taste
How To Prepare:
1~Cut avocado in half, remove the pit, and peel. Finely chop tomato; core, seed, and finely chop jalapeno pepper.
2~In a large bowl, using a potato masher or fork, mash the avocado with lime juice until it is fairly smooth. Stir in the chopped tomato and jalapeno pepper, green chilies, cilantro if desired, and pepper sauce.
3~Season the mixture with salt and pepper. Transfer the guacamole to a small bowl, and serve. (Makes 1 3/4 cups)
