2 Tbsp pancake mix (I use Atkins)
2 Tbsp heavy cream
1 pk Sweet' low
1/2 tsp cinnamon
1/2 tsp vanilla extract
4 oz. cream cheese
1/4 tsp cinnamon
1 pk Sweet'n low
How To Prepare:
1. Beat eggs with cream. Add pancake mix, sweetener, cinnamon and vanilla, beat again. Don't worry about the lumps.
2. Filling: soften cream cheese in microwave. Add cinnamon and sweetener and mix well.
3. Pour 1/4 of egg mixture into a buttered non-stick skillet on medium- high heat. Tip skillet so egg mixture covers bottom. Cook until solid and slightly browned, flip and cook until slightly browned. Remove to plate and repeat making 4 thin omelets.
4. Spread 1/4 of cream cheese mixture over each omelet and roll up. Enjoy!!
