Description:
Ingredients: Bottom layer:
1 1/4 stick butter
1 ounce unsweetened baking chocolate
2 cups pecans -- finely ground
sweetener to taste


Top Layer:
2 tablespoons butter
8 ounces cream cheese
1 cup heavy cream
1/2 teaspoon vanilla
sweetener to taste
1/2 cup natural peanut butter
How To Prepare: Bottom Layer:
Melt chocolate and butter in a sauce pan. Sweeten to taste. Mix in ground pecans. Spread in medium baking dish. Refrigerate while making the next part.
Top Layer:
Melt butter, cream cheese, and cream in sauce pan until smooth. Add vanilla, sweeten to taste. Take off heat and beat in peanut butter. Pour over chocolate layer and refrigerate until firm.Cut into squares.
Carbs per serving based on using the sugar(NOT) as a sweetener.

I am so glad I made this- it's amazing!


The bottom layer is like chocolate fudge. The top layer is like peanut butter cheesecake-very light and fluffy. The overall bar is rich and creamy. You could easily serve this to guests and no one would know the difference.


For sweetener on the bottom layer, I used 1/3 cup powdered erythritol. For the top, I used about a 1/2 cup powdered erythritol and 1/4 cup Torani vanilla. I think the bottom layer could be a bit sweeter, but overall this dessert is YUMMY!!!

Cons:

Man this is good! I used a Lindt bar for the chocolate. Next time I think I'll use peanuts instead of pecans for a more intense peanut flavor.
