Ingredients: For cake-
¸ cup slenda or other
sweetner to taste
¸ stick (4 tbsp) butter,
¸ cup low carb shake mix
(I use chocolate but you can
use any flavor)
¹ cup Atkins bake mix
¸ tsp baking powder
1 large egg
¸ tsp vanilla extract
2 tbsp Davinci Sugar Free
Amaretto Syrup (or any
other flavor)
¹ cup heavy cream
1 ¸ tbsp oil
For Filling-
1 small package Jell-o
sugar free white chocolate
pudding mix (or any flavor)
1 ² cup heavy cream
¹ cup cold water
How To Prepare: - Line a small baking sheet
with wax paper and spray
with cooking spray. Preheat
oven to 350 degrees.
- In a small bowl add
pudding mix, cream and
water and whisk until it
begins to thicken. Set in
refrigerator to set.
- In large bowl add all
ingredients for the cake and
mix until completely
blended. The batter will be
somewhat thick.
- Spread batter on lined
baking sheet evenly so that
the mixture fills the entire
sheet. Place in oven and
bake approximately 15
minutes. When cake is
done (set up and toothpick
comes out clean when
inserted) remove
immediately from oven.
- Spread the pudding
mixture generously over
cake from edge to edge, (it
will use about half of the
pudding mixture, the rest
you can keep in the frig for
about a week). Using wax
paper carefully lift cake on a
clean surface and slowly
roll from one end to the
other pulling wax paper
away as you roll. Carefully
slice into 8 pieces and
immediately refrigerate for
atleast 30 minutes

You can alter the cake flavor
by using other flavor shake
mixes and syrups...also can
do the same with the
mousse by changing
flavors, syrups, or adding
decaf ground coffee for a to
die for mocha flavor...
