Boneless chicken tenderloins
or breasts pounded thin
sliced or shredded cheese of choice
0 carb deli ham thin sliced
beaten egg (I used 1 for 16 tenderloins)
spices of choice
non stick spray
How To Prepare:
Spray baking dish generously with non stick spray. Take pounded chicken tenderloins or breasts and put a slice of cheese (or some shredded cheese) & 1 or 2 slices of of ham on the chicken. Roll up. Put them in the baking dish as you do them. Put the baking dish in the fridge for a few hours to let them set up (you can skip this step if you are in a hurry but it makes them easier to dip in egg & then parmesan cheese mixture). Beat egg in a bowl. Put parmesan cheese & spices in another bowl (amount of parmesan cheese you use will vary on how much chicken you are making). Take each roll up one at a time and dip in the egg, let excess egg drain off. Roll in parmesan cheese-spice mixture. Putting roll ups in the baking dish as you go along. Drizzle melted butter over roll ups. Bake for about 45 minutes at 375 degrees. They should be golden brown on the top.
