In frying pan brown mushrooms, onions and 1/2 tbsp of tarragon, salt &pepper to taste, in 1 tbsp butter. Set in casserole dish.Lightly brown chicken in frying pan with remaining butter (1/2 tbsp). In separate dish mix the 2 mustards. Place chicken in casserole dish on top of mushroom mixture. Sprinkle on remaining tarragon. Spread mustard mixture on chicken. Cover and cook at 325C for approx 20-25 min. (Should be lots of juice from mushrooms) Remove lid and cook for additional 5 to 7 min or until no longer pink inside. Variation: use different flavours of mustard eg. hot&spicey
