2 c. shredded cheese (I use Four-Cheese Mexican)
4 oz. cream cheese, softened
4 large eggs
1/3 c. heavy whipping cream
1/4 c. grated Parmesan cheese
1/2 tsp. Italian seasoning
1/4 tsp. garlic powder
1/2 c. low-carb tomato sauce
1 c. shredded mozzarella cheese
6 slices pepperoni
How To Prepare:
Preheat oven to 375.
Spray pie pan with non-stick cooking spray. Sprinkle Four-Cheese Mexican on the bottom.
Beat together cream cheese and eggs until smooth. Add cream, Parmesan cheese, Italian seasoning and garlic powder. Pour this over the cheese.
Bake in preheated 375 oven for approx. 23 minutes or until eggs are set.
Spread on tomato sauce, top with mozzarella cheese and top with pepperoni slices. Return to oven and bake until bubbly and browning (about 5-7 mins.) Let stand 10 mins. before serving.
