Ingredients:

4 each jumbo eggs -- beaten slightly
1/2 cup canned chili, no beans -- *I prefer Wolf brand and carb counts are for that brand
1/4 cup diced onion
1/2 cup shredded cheddar cheese

How To Prepare:
|
This recipe makes 2 servings alone or fills 4 low-carb tortillas.
Beat eggs and season with salt and pepper as desired. Heat chili and onions in a non-stick pan. Once onions are slightly cooked(you want them a little crunchy still), add beaten eggs and stir to scramble until cooked through. Splash in some tobasco sauce if desired at this point.
Top with cheese and dig in!
This is an UGLY looking dish, but very filling and great for cold mornings.
1/2 cup of Wolf brand chili is 10g carbs and 3.5g fiber, so adjust recipe according to whatever brand you use.
