Description:
Ingredients: 1/4 cup Atkins Pancake mix
1/4 cup soy flour
2 eggs
1 tbsp oil
1/3 cup heavy cream and Water
Pinch of baking powder.
How To Prepare: 1. Put all ingredients in a bowl except for the heavy cream and water.
2. Take a 1/3 measuring cup fill half with water and half with heavy cream to make 1/3 cup liquids.
3. Mix together and cook like you would regular pancakes.



I have found the puff up pretty good. The trick is to use a thin layer of batter and spread it out to the size of a small pancake.


I found the atkin's too sweet by itself.
Number of Servings: 2/ Three cakes each
Carbs per serving - include all nutritional information if known: 6 carbs 2.5 fiber
