Spinach with white cream sauce and parmesean cheese
2 boxes frozen spinach well drained
1/2 cup chopped onion
1/4 cup heavy cream
2/3 cups water
2 eggs lightly beaten
3 TBS butter or olive oil
8 oz parmesan cheese
salt and pepper to taste
How To Prepare:
Place butter in the bottom of a heavy sauce pan and melt. Add chopped onion and cook til translucent.Remove from heat. Mix together cream water and 2 eggs. Add this mixture to the onions. Add spinach that has been drained and has all the water squeezed out, salt, pepper and cheese. mix altogether well. Transfer to a greased or sprayed baking dish and bake til golden and slightly puffy.
