1/2 bag plain pork rinds
2 TBS half and half
1 7oz can chopped green chiles
2 TBS minced onion
1 TBS minced garlic
Salt to taste
5 oz Monterey Jack cheese, shredded
How To Prepare:
In a bowl large enough to accomodate your pork rinds, beat the egg and half & half. Add the pork rinds, toss, set aside to soak. Stir every few minutes to ensure all surfaces of each rind are covered with the egg mixture. Meantime, drain the chiles and mix with the garlic, onion and salt. Once the rinds are soft, arrange them in the bottom of a sprayed casserole (8X8), bake at 350 for approximately 15 minutes. Remove from oven and spread the chiles on top and top with the cheese. Bake until browned.
