To make this a meal(serves 4 instead of 6), add cooked shrimp or chicken when tossing.
1 ounce whole wheat pasta -- use farfale or penne
8 ounces frozen broccoli flowerets
1/2 cup sliced cucumber, peeled
1/4 cup diced tomatoes
1/4 cup sliced red onion
4 cups shredded lettuce -- romaine
1 cup fresh spinach -- torn
1/4 cup green olives
1/4 cup pepperoncini peppers -- sliced
6 tablespoons light italian salad dressing
1/4 cup shredded parmesan cheese
How To Prepare:
Cook pasta according to package directions. Add broccoli the last 2 minutes of cooking time then drain well together. Toss 2T of the dressing with the pasta and broccoli and let cool to room temperature.
Toss everything together and serve immediately.
NOTES : If you use low carb pasta, subtract 21g carbs/2g fiber and 99 calories from the entire recipe totals and replace with the info from the pasta you use.
