Ingredients: 1 Cup Atkins Baking Mix
1 and 1/2 Tsp Sugar.. (Must have this)
1 and 1/2 Tsp Yeast
1 Tbsp of extra virgin olive oil
1/8 tsp salt
1/8 tsp garlic powder
1/8 tsp ground basil
1/2 cup very warm water
How To Prepare: It is very important to use really good ingredients, the Atkins Baking mix truthfully is a nasty tasting stuff that needs lots of help to taste really good. so use extra virgin olive oil and good spices. If you dont like Basil, try Oregano instead or even Thyme and the salt can be removed but really does add to flavor of the crust. Also do not try and remove the sugar. yeast needs sugar to do it's magic and the very small amount of sugar in this is mostly consumed by the yeast and doesnt increase the carbohydrates by more than 1 or 2 for the whole batch. You can increase the flavor by using 1 tsp of brown sugar or 1 tsp of honey in place of the sugar.

Put all the dry ingredients in a mixing bowl and mix with a spoon. Now add the olive oil and 1/2 cup of very warm water and completely mix until you get a somewhat wet ball of dough. if it's still too wet add a small amount of baking mix (1/2 tsp or less) or if it seems too dry then add a few sprinkles of water.

now this doesn't feel or act anything like bread dough. but knead it for about 5 minutes anyways to be sure everything ix mixed well.

form it into a ball in the bowl, cover the bowl with a damp towel and set in a warm location for 45 minutes to 1 hour to "rise". cince this doesnt have flour in it and no gluten it really is not going to rise like bread. but we are gaining the yeat flavor that makes bread and pizza crust taste like they should.

after this initial rise, knead the dough again and you can optionally let it rise once more to consume most of the sugar that is left or go ahead and pat it down into a pizza pan that is covered in a light coating of olive oil. Dont try to roll it.. just pat it in there like a large thin wierd flavored cookie.

I personally like to cook the crust for 5 minutes first befoer putting on the sauce and toppings.

I suggest loading this up with tons of meat and other 0 carb items to make the most of it.

I also use hunt's tomato sauce as it has the lowest carbs and add garlic, thyme,basil,oregano and a touch of fennel. (for a small can of sauce, add 1/4 tsp of each of the above. 1/8th of the ground fennel.) as the spices add zero carbs to the sauce.
