2 boneless/skinless chicken breasts
Enough pork rinds to produce 1 cup of pork rind crumbs (approx 20)
3 Tablespoons of parmesan cheelse (powdered type)
2 teaspoons ground black pepper - adjust to taste.
1 teaspoon garlic powder
1 beaten egg
How To Prepare:
In food processor pulse pork rinds until fine. Add parmesan cheese and black pepper, pulse to blend.
Cut chicken breasts in to strips. Dip chicken strips into egg mixture the coat with rind mixture. Combine equal amounts of butter and olive oil in skillet. Just enough to cover bottom of skillet. Fry 2-3 minutes per side. Dip in bleu cheese dressing for extra flavor.
