2 cups peeled jicama, cut into match-like strips about (6.5 oz)
3 small red, yellow, and green sweet peppers, cut into thin match-like strips(1.5cups)
1 small red onion, thinly sliced & halved
in a screw-top jar, combine 1/4 cup peanut or olive oil; 1/3cup snipped fresh cilantro;
2 tablespoons red wine vineger
1sm fresh jalapeno,seeded and finely chopped;1 minced galic clove; one splenda packet
How To Prepare:
in a lg salad bowl combine jicama strips, and onion slices. prepare jalapeno dressing. pour dressing over jicama mixture, tossing to coat, cover and chill at least 1 hr or up to 6 hrs. stirring occasionally. enjoy! from bhg magazine w/slight changes
