Description:
Ingredients: 2 med cucs or 1 long English cuc, peeled (1 med cuc, seeds removed=approx 4.4gr)
2 cloves garlic, crushed, minced (2gr)
1 tbs ginger, julienned then minced (.9gr)


1/4 c chopped scallion(spring onion or green onion)(1.9gr)
1 tbs rice vinegar
2 tsp splenda
a dash or two cayenne powder

How To Prepare: Slice the cucs in half lengthwise, use a spoon to dig out the seeds, rinse. Place them on the cutting board and set over the sink or in the sink and sprinkle with salt on both sides; let rest 15 minutes.


Rinse very well and slice into 1/8"thick slices. Place into a deep container which has a lid. Add the remaining ingredients and shake well, refrigerate at least 2 hours to allow the flavors to
meld.


The flavor should be a balance of sweet, sour, hot. You may wish to add a dash or two of salt to the finished product depending on how well you rinsed your cucs.
