Gretchen Gegenheimer Pork Tenderloin with sauteed veggies

2-3 lb Pork Tenderloin
1 Stalk of finely chopped celery
1/4 onion finely chopped
1/2 cup mushrooms finely chopped
1/2 cup water
1 tablespoon oil
How To Prepare:
Brown the tenderloin on all sides using the oil. Place tenderloin in a baking dish along with the water. Sautee the celery, onion, and mushrooms in the pan drippings. Pour mixture over the tenderloin. Salt and pepper to taste. Cover and bake at 350 degrees. Bake for 20-25 minutes per pound of tenderloin.
***hint*** I use a quick chopper to cut up the veggies. Cuts 5 minutes off the prep time!
