1 Pork Butt Roast (or whatever you like)
1 medium onion, diced
3 to 4 cloves of garlic, minced
salt and pepper to taste
1/2 teaspoon ground cumin
diced jalapeno to taste, I like hot hot food, you don't need to add jalapeno if you don't like it spicy
28 ounces each green chilies chopped and diced tomato
1 teaspoon of oregano
3 teaspoons of thick n thin not starch thickener
3 to 4 cups of water
How To Prepare:
Brown pork roast in oven at 400 degrees for 20 minutes. I usually put this in a crock pot and let cook all night. Put all ingredient into a pan, or crock pot, and let it simmer until the pork shreds. Serve over eggs, or in a bowl with cheese, or in low carb tortillas with cheese.
