1 tube of sausage
4 cream cheese bricks
1 ricotta cheese container
1 head of cauliflower
1 bag of spinach
1 container of mushrooms
3 sauteed poblano peppers
How To Prepare:
Start the sausage cooking, crumbling into small pieces as it browns. Microwave cauliflower until cooked but still firm
Saute sliced mushrooms, spinach de-stemmed and tore in pieces, and diced poblano peppers in olive oil until peppers are soft. While the veggies are cooking, soften cream cheese in microwave. Add ricotta cheese and two eggs, mix well. Add sausage and veggies. Mix well until evenly distributed. Bake in 375degrees oven until lightly browned on top, about 30 - 45 minutes. Add cheese on top and bake until cheese melted. Take out and let stand approximately 10 - 15 minutes. Serve by itself or as a side dish.
