2/3 cup chopped cucumber -- seeded
1/2 cup radishes -- chopped
1/3 cup chopped scallions -- green onions
2 medium pepperoncini peppers -- sliced thinly
1 tablespoon olive oil
2 tablespoons red wine vinegar
1/4 teaspoon dried basil
1/2 teaspoon sweetener
1/8 teaspoon salt
1/8 teaspoon black pepper
1 1/2 pounds snapper fillets -- tilapia is "cherry snapper" - 4 fillets
2 teaspoons olive oil
1 each salt and pepper -- to taste
How To Prepare:
Combine everything except the fish and the 2tsp olive oil and set aside at room temp to meld flavors while you prepare the fish.
Heat olive oil over medium heat in a large non-stick skillet. Salt and pepper fish. Saute for 2-3 minutes per side(turn carefully) until fish flakes easily with a fork. Place each fillet on a plate and spoon relish on top.
