Flounder filets stuffed with spinach and garlic and covered in a rich cheese sauce
4 flounder filets
1 tablespoon olive oil
1 pk. frozen chopped spinach
1 clove garlic
salt and pepper
1/4 cup heavy cream
3 tablespoons dry white wine
1 cup grated sharp cheddar
How To Prepare:
Heat olive oil in frying pan with minced garlic, til oil is fragrant (don't burn garlic). Add frozen spinach and cook and stir until spinach is heated through. Drain well.
Lay out flounder filets, salt and pepper lightly, and evenly spread spinach mixture over filets. Roll up starting with the small end. Lay rolls seam side down in baking pan (sprayed with Pam).
In small saucepan, mix cream and white wine and heat over low heat until just below simmer. SLOWLY, whisk in cheese a bit at a time until melted. Do not turn up the heat (you'll be tempted to do so) and do not put too much cheese in at once.
Pour sauce over filets and bake at 350 for about 20 minutes.
