Super Easy and delicious!

This whips together in no time at all! I used olive oil out of habit instead of butter and it was great. I was a little worried because it's alot of spinach but it's very very tasty. I put it over rice for my husband, the nonAtkins guy and he loved it too!

WOW!! No need for parmesan cheese..I tweeked it a bit..I added about 2 teaspoons fish sauce and 1 1/2 tablespoons of mirin. and 1/2 a teaspoon of cajun seasoning. This is delicious. Must leave a note for my daughter when she gets home not to eat this because it's one of my low carb dishes for the week. Yum!
