8 each romaine lettuce leaves -- cleaned
1 pound shrimp -- peeled and deveined
1 teaspoon chili powder
1 teaspoon garlic powder
1/2 cup diced onion
1/2 cup diced green bell pepper
1/2 cup diced tomato
1/4 cup olive oil
1 each salt and pepper -- to taste
1 cup shredded cheddar cheese
How To Prepare:
Clean and dry romaine leaves and refrigerate.
Heat oil in a large skillet and sautee onion, green pepper and tomato for 5 minutes or until wilted. Add in cleaned shrimp and seasonings and saute until shrimp is cooked through and vegetables are just softened.
Remove from heat and spoon into romaine leaves, top with cheese and serve taco-style.
**Can use chicken, beef, pork, fish or tofu in place of shrimp if desired.
