1/4 cup olive oil -- good quality
1 pound shrimp -- peeled and deveined
1 pound fish fillets -- flounder or cod are good
1 pound crab meat -- cleaned and picked over for shells
1 cup shredded cheddar cheese
1 cup gruyere cheese -- or 1 cup swiss
1 cup heavy cream
3 ounces cream cheese with chives and onions -- or use plain cream cheese and add 2 chopped green onions)
1 cup water -- or chicken broth
1 teaspoon pepper
1/2 teaspoon salt
1 teaspoon tabasco sauce
4 tablespoons white wine
How To Prepare:
In a large kettle, melt cheeses with cream and water until smooth. Add wine and seasonings. Keep warm but not simmering.
Cut seafood into bite sized pieces.
In a skillet, heat oil until very hot and sear seafood in batches until just cooked -about 2 minutes.
Add to hot cheese mixture and stir in gently. Allow to cook over very low heat, stiring constantly, for 5 minutes to finish cooking seafood. Serve as a stew. Good with low-carb bread to dip in it.
