This very rich chocolate mousse w/ peanut butter goes together in a flash. Or you can make it ahead if you can resist it!
1 cup heavy whipping cream; 2 tablespoons coconut oil; 1/4 cup cocoa powder; 2 tbsp peanut butter; sweetner in the equivalent of 1 tablespoon of sugar (I've used both splenda and sweet 'n low at various times.)
How To Prepare:
Pour HWC into a clean bowl. Set aside. Gently melt all other ingredients in the top of a double boiler, until almost melted. Remove from heat. Meanwhile, with a clean fork, whip cream until slightly frothy and thickened (only a minute or two). Add one tablespoon of the chocolate mix to the heavy cream and stir a couple of turns to temper the cream. Pour in the rest of the chocolate mixture to the cream and stir to combine. By the time you've stirred enough to combine, it should be thickened to delicious yumminess!
