Description: mint pudding like pie with chocolate crust - LC but not low fat - very easy to make - can make with or without the chocolate topping
Ingredients: CRUST
1/2 c butter softened (1 stick)
1 c plus 2 tbsp chocolate shake mix (I used Atkins)


Preheat oven to 350. Spray a 9-inch pie pan and set aside. In a medium bowl, cream butter and shake mix thoroughly. Press dough evenly on bottom and up the sides of the prepared pan. Bake for 12 minutes. It might puff up in the middle. Just press gently down.

FILLING
2 c heavy whipping cream
2 tbsp sugar free Jello instant white chocolate pudding mix
1/4 Splenda
1 tsp mint extract (or to taste)
6-10 drops green food coloring (to your desire)


In a medium mixing bowl, whip all filling ingredients with an electric mixer until stiff (Pie will not cut nicely if not whipped stiff). Scrape the mix into the cooled pie crust. Top with chocolate topping, if desired, or whipped topping (I used cool whip = me bad)

CHOCOLATE TOPPING
1/4 c heavy cream
1/4 of 1oz square unsweetened baking chocolate, broken up
1/4 tsp liquid Sweet'N Low sweetener or equivalent
3/4 tsp unsweetened baking coca
1 tbsp plus 1 tsp Splenda
Pinch of salt.


1g carb 0g fiber 1g protein 12g fat
108 calories


In warm saucepan, warm cream over low heat. While cream is heating, melt chocolate in the microwave in a small bowl for 1 minute, stopping at 30 seconds to stir. If not melted after stirring well, microwave at 15 minute intervals, stirring each until melted. Whisk cholocate and remaining ingredients into warm cream until well combined. Cook over low heat 15 minutes, stirring frequently. Chill until consistency of frosting.
Put frosting in a plastic baggie for a mini disposable decorating bag. Twist the top and cut a while in the bottom corner of the bag. Drizzle over the pie. Refrigerate until set.


This pie is totally awesome and totally easy. I didn't use the choc topping, as I didn't have liquid sweetner, but it is great without it.
