Ingredients:
|
1 cup heavy cream
6 packets artificial
sweetener
1/2 teaspoon vanilla extract
1/2 cup fresh blueberries --
or frozen -unsweetened
8 each strawberries --
sliced thin
8 tablespoons wheat germ
2 tablespoons butter
1/2 teaspoon ground
cinnamon

How To Prepare:
|
In a bowl, gently toss
blueberries w/1 pkt
sweetener and 1/4 cup
water.
In another bowl, do the
same with the strawberries.
In a baggie, toss wheat
germ with 1 pkt sweetener,
cinnamon and butter.
Toss well, then spread out
in a single layer on a cookie
sheet to dry.
Beat heavy cream with
remaining sweetener and
vanilla extract.
Put about 2T of the beaten
cream into each of 8 parfait
or champaign
glasses. Layer a few
blueberries, then 1T cream,
then a layer of
strawberries, then more
cream and finally the
sweetened wheat germ on
top. Refrigerate until serving
time. For a real summery
taste -use a few drops of
peppermint extract instead
of the vanilla:) Carb saving
tip: the wheat germ makes
up a huge amount of the
total
carbs for this recipe(about
30g!) - if you like, sub
chopped macadamias or
pecans(about 1/4 cup)
-toss with the butter,
sweetener and cinnamon
and
use instead!(using
macadamias, it takes the
recipe total down to a mere
35g for 8 servings!)
