"This is a great low-fat cheese pie. It used to be made with dry cottage cheese, but I have adapted the recipe to use regular cottage cheese that is more readily available.
|

Ingredients:
|
* 1 12 oz low-fat, small curd cottage cheese * 1 8 oz low-fat cream cheese * 1 egg * 1/2 cup sugar or splenda * 1 heaping tablespoon flour * 2 teaspoons vanilla * 1/4 t cinnamon * Unbaked top and bottom pie crust * Cinnamon/Sugar mix

How To Prepare:

1. Mix together cottage cheese, cream cheese, egg, sugar, flour, vanilla and cinnamon. 2. Place one of the pie crust into a 9" pie plate. 3. Pour filling to within 1/2" of the rim. 4. Take the other crust and cut into strips, about 8. Place them lattice style on top of the filling. The filling will slightly ooze over the lattice. 5. Seal the edge, either by pinching or pushing down with a fork. 6. Sprinkle with cinnamon/sugar mix. 7. Bake at 375 for approximately 45 minutes until top is slightly browned and puffy. 8. Cool thoroughly. Store on counter (day or two) otherwise store in fridge.
