Description:
Ingredients: crust:
1/2 stick butter
1 ounce unsweetened
baking chocolate
1 1/2 cups pecans -- finely
ground
sweetener
filling:
1 unflavored
gelatin(envelope)
12 ounces cream cheese
3/4 cup peanut butter
1/2 cup heavy cream
2/3 cup water
sweetener


How To Prepare: Melt butter and chocolate in
pan, sweeten to taste (I
used a heaping tbsp
sweetbalance, which is 4
times as sweet as sugar).
Take off heat, add ground
nuts and mix well. Cool until
easy to press in 9" pie
plate. Freeze. Whip the
cream and set aside.
Dissolve gelatin in 1/3 c.
boiling water. Add 1/3 c.
cold water, and mix well.
Beat in softened cream
cheese, beat until smooth
and no lumps. Add PB and
mix well. Sweeten to taste, I
used about 1/4 c.
sweetbalance. Add in
whipped cream and mix
slowly until all uniform. Pour
into frozen pie crust and
refrigerate a few hours or
overnight.
NOTES : Counts for
sweetener not included in
totals.
