Ingredients:
|
Crust:
3 egg whites
1 dash cream of tartar
3 tablespoons splenda
1/2 teaspoon vanilla extract
1 dash salt
Filling:
16 ounces frozen
strawberries -- thawed
1/4 cup splenda
1 packet unflavored gelatin
OR strawberry s/f
gelatin dissolved in 1/4 cup
boiling water
1 tablespoon lemon juice
1/2 cup water
Topping
1/2 cup heavy cream
2 splenda packets
1/2 teaspoon vanilla extract

How To Prepare:

Beat egg whites with cream
of tartar until almost stiff,
then add the rest and beat
to stiff peaks. Spray a 9" pie
tin with pam spray and put
the meringue mixture in it,
spreading so you have it
about even all over (so it
cooks evenly). Bake in the
preheated 350f oven for 20
minutes or until nicely
browned all over. Remove
from oven and let cool
completely.
Filling: slice 5-6
strawberries and set aside
for garnish. Chop the
remaining strawberries and
put in a saucepan with the
sweetener and water. Bring
to a simmer and cook for
3-4 minutes, then add
lemon juice and dissolved
gelatin. Stir well and set
aside. Let cool approx 15
minutes or until it's about
room temp (longer is fine
-but don't let it set up). Pour
into cooled shell, cover and
refrigerate at least 5-6
hours.
Topping (wait until you're
about to serve it to do this)
Beat cream, sweetener and
vanilla extract until stiff.
Spread over top of pie and
garnish by arranging sliced
strawberries on top.
