Description:
Ingredients: 2 Cups grated zucchini
1/2 tsp liquid splenda
1 cup oil
3 Tbl vanilla
1 tsp cinnamon
1.5 Tbl Xanthan gum
3 eggs
2/3 cup unprocessed wheat bran
1 1/3 cup 0 carb whey protein
1 1/2 tsp salt
1/4 tsp baking soda
1/4 tsp baking powder
1 cup chopped walnuts
How To Prepare: mix all ingredients together and sprinkle xanthan gum in slowley. Preheat oven to 350¼ and grease a 13X9" glass baking pan. Pour into pan and spread out evenly. bake for 30 minutes. Let cool before eating or serving...as the texture and taste changes once it is cool. Top with my fluffy cream cheese frosting.
