Make Your Own Low Carb Chocolate Soda
This recipe adapted from an Ina Garden (The Barefoot Contessa) recipe. This should serve 4

Ingredients:
|
Chocolate Syrup:
3/4 cup cocoa powder, sieved
Pinch kosher salt
1 1/2 cups sugar - substitute with artificial sweetner of choice
1/2 teaspoon instant coffee or espresso granules
1 teaspoon vanilla extract
Ingredients to mix with Chocolate Syrup
Chocolate Syrup
3 T heavy cream
Club Soda or Seltzer or Sparkling Water

How To Prepare:

Chocolate Syrup
Combine the cocoa, salt, sugar substitute and 1 cup of water in a medium saucepan and bring to a boil. Add the coffee granules, and simmer for 5 minutes. Pour the syrup into a bowl and add the vanilla. Cover and refrigerate until ready to use
Mixing soda:
Chocolate Syrup plus 3 tablespoons heavy cream in a tall soda glass. Whisk with a fork, then slowly, while still whisking, add the club soda or seltzer or sparkling water until the glass is three-quarters full. serve with a straw.
