This recipe was an experiment - imho a great success. I'm not that good at estimating amounts of ingredients - use your judgment. My best guess is that there are about 20 carbs per PAN - I cut mine into 6 big pieces and used a small baking pan that is about 6 inches wide, 2 inches deep and 12 inches long.

Ingredients:

4 medium zuchinni
1 lb ground beef
1/2 lb sweet italian sausage
1/2 cup of no sugar tomato sauce
1/2 container full fat cottage cheese
2 eggs
4 oz canned mushrooms
1 cup of frozen spinach
generous tablespoon of minced garlic (jarred)
2 cups of shredded motzarella cheese
generous sprinkle of red pepper flakes (to taste)
generous sprinkle of onion powder
salt and pepper to taste
olive oil

How To Prepare:

Wash then slice zuke's on the long side to make about 16 thin strips. Sautee in olive oil till soft and they have some color, drain and let cool.
Brown beef and sausage, drain.
While everything is cooking make the filling - in a large bowl, combine eggs, mushrooms, spinach (I used it frozen right out of the bag), garlic, 1 cup (more or less) of motz, cottage cheese, red pepper flakes, onion powder. Add S&P.
Lay the zuke strips crosswise in the pan to make a layer. Top with filling and cover with 1/4 cup of the tomato sauce. Layer zuke again, more tomato sauce and top with remaining motz. Bake at 350 for about 45 mins till bubbly. Cool and cut into 6-8 pieces.
