2 Large Leeks
1&1/2 teaspoons Salt
1&1/2 cups Chicken Broth
2 tablespoons Butter
1/2 cup Cream
How To Prepare:
2 Large Leeks,dark green tops and roots removed, cut in half lengthwise the crosswise in 1/8 inch slices. Fill sink with water and rinse well. Should be about 4 cups when drained,place in a pan with:
3 cups boiling water
1&1/2 teaspoons of salt
Simmer from 5-7 minutes or until tender,but not mushy. Add and heat to a boil:
2 tablespoons butter
1&1/2 cups chicken broth (strong, well-seasoned)
Reduce heat and stir in:
1/2 cup cream
Season to taste
Use hand held blender or reg blender to smooth and serve at once.
