A decadent, cheesey cream of spinach soup! Rich and satisfying.
* 3 tablespoons butter
* 1 cup diced onion
* 8 oz. cream cheese
* 6 cups chicken broth
* 2 1/2 cups heavy cream
* 1/4 pound blue cheese, crumbled
* 1 (10 ounce) package frozen chopped spinach
* salt to taste
* ground cayenne pepper to taste
* 1/2 pound bacon
How To Prepare:
In a large pot over medium heat, combine the butter or margarine and the onions. Saute for about 3 minutes. Add broth and heavy cream reduce heat to medium and simmer for about 5 minutes. Add the blue cheese and cream cheese and stir until blended, then add the spinach and cook 3 more minutes. Add salt and cayenne pepper to taste.
3. Allow to cool and puree in a food processor or blender a little at a time. Ladle into individual bowls and sprinkle with the bacon.
