Description:	This came out really good, thought I would share it with you. You could modify it if you want, I like mine spicy so I added more of each. I froze some and had it this week, it was hot this time around! Next time I'll stop adding the chili powder.
Ingredients:	2 TBS oil 1/4 onion chopped fine 2 sm. stalks celery chopped fine 2 chicken breasts chopped fine 1 can Ro-Tell tomatoes and green chilies 2 tbs cumin 1 tbs garlic powder 1 tbs chili powder 3 cans chicken broth 1 1/2 TBS - ThickenThin No starch, or a little corn starch - either is optional, you don't have to thicken it.
How To Prepare:	Add oil to skillet or pot and saute onion, celery, chicken. Add chicken broth, Ro-Tell tomatoes ( I used a hand blender to almost dissolve mine) add spices. Cook on medium heat for 30-45 minutes. You can tweak the flavor some according to taste. I like it spicy so I added more of this and that. Or add salt if you think it needs it. I didn't use any and I'm a salt person, it didn't need it in my opinion. 1 LC tortilla as garnish Using a pizza cutter, cut thin strips of a LC tortilla, bake until crisp at 400. I almost burned mine so watch them. ThickenThin is a starch made from vegetables. 1 tsp = 2.3 carbs so you're adding 11-12 carbs for the whole pot of soup, divided up your not getting many. I bought mine at Netricion. It's only the second time I used it. Just added a little water in a bowl to make it creamy, then add a little at a time until its the consistency you want. I made mine a little thick, more of a creamy texture. One LC tortilla had 4 net carbs and was garnish for 3 bowls.

Cons:	takes a little longer than an hour

This is delicious. Tastes exactly like Chili, except no beans. I made this last night, and it took a little longer than an hour. It took about 10-15 to prepare, and about an hour to actually cook. I think it's better if it cooks longer, and even better if it sits. I made a batch according exactly to the recipe last night, and it was so good. Put a little sour cream and mexican cheese on top, and you've got a delicious low carb soup. I wonder how this would be with the Cauliflower rice that there's a recipe for (I think on here).

For somebody that has never cooked a soup before (I'm only 15), it was relatively easy, but a little harder than I thought.

I added Juanita's Mexican style Hominy, and did not thicken mine with anything.
This Hominy is low carb but most Hominy's are not. Since I am in Texas, I also topped with Avocado and a few fried low carb corn tortilla strips.

My husband never likes anything I cook! I followed this recipe, down to going to the store and getting the Ro-Telle tomatoes and green chili. He loved, loved this soup. We had it tonite on a cold rainy night in So. Calif. and not only was he happy, I even liked it. Thank you so very much. I would not change a thing.

I made this for my husband tonight and was so pleased with the result. We like more a celery flavor than tomato so I used 4 stalks instead of 2, added Julio's seasoning in addition to others already listed, and used Ro-Tel Mexican Lime & Cilantro which added 2 really great ingredients! He is very picky about his Chicken Tortilla Soup and finds something wrong with most, but this was a huge hit!

Thank you so much for posting... this is a recipe we will keep even if we quit LC.
