Description: Thanks to all of you that have posted your cabbage soup recipes on this site. It inspired me to make a version. It's so delicious and satisfying, my dinner tonight was one bowl of soup and it really was a complete meal.
This recipe makes 20 servings (8oz each) of soup - enough for my family to eat once or twice this week as a meal, with enough left over to take to work for lunch. My children and spouse aren't concerned about a low carb diet like I am, but this soup is so good they can't tell it's 'missing' something!
Ingredients: 2 32oz containers Swanson chicken broth (0 net carbs)
2 cups of water
4 beef bouillon cubes (4 net carbs)
1 head of cabbage (20 net carbs)
1 8oz pkg fresh sliced mushrooms (2.4 net carbs)
1 1lb pkg Hillshire Farms Lite Smoked Sausage, cut in half and sliced into half-moon chunks (0 net carbs)
1lb of ground turkey (0 net carbs)
1lb of 95% lean ground sirloin (0 net carbs)
1 14.5oz can Red Gold diced tomatoes (5 net carbs)
2 6oz cans Contadina tomato paste (12 net carbs)
1 17.5oz can sauerkraut (22 net carbs)
2 tsp onion powder
2 tsp celery seed
2 tsp salt
1/2 tsp dill weed
White pepper to taste
Tobasco sauce (optional)
How To Prepare: Chop cabbage in ¼ inch strips. Using a 5 quart stock pot, combine cabbage, mushrooms, onion powder, celery seed, salt, dill weed, and bouillon cubes. Add 1 container of broth, and 2 cups water (save other container of broth for later). Bring to a rapid boil, then reduce heat to medium and cover for 30 minutes. Stir occasionally.


While the cabbage and mushrooms are cooking, brown all 3 meats and set aside.


When pot of cabbage has cooked for 30 minutes, add meats, tomato paste, diced tomatoes, sauerkraut, second container of broth, and pepper. Stir thoroughly. Cover and simmer, stirring occasionally for another 20-25 minutes.


Serve with a splash or two of tobasco, if desired.
