A fast and easy chowder to make any night of the week.
Other meats such as chicken, turkey etc. can be used instead of shrimp or seafood...
2 stalks celery chopped(1 cup)
1 medium onion chopped(1/2 cup)
1 Tbsp. olive oil
2 14.5 oz. cans od dice tomatoes with basil, garlic and oregano, undrained
10 0z. medium shrimp peeled and boiled
1/2 cup whipping cream
1/2 cup water
Ground black pepper to taste
****Low Carb Tortilla's fried crisp in alittle olive oil.
How To Prepare:
In a large saucepan cook celery and onion in hot olive oil just until tender. Stir in tomatoes and heat throughly.
Add shrimp, whipping cream and water.
Cook over medium heat until really hot but not boiling.
Season to taste with black pepper.
Ladle chowder into bowls and top with basil.
**Optional**Serve with the low carb tortilla chips if desired.
