2 cans of low sodium chicken broth
1 boneless, skinless chiken breast
1/4 lb 85% lean ground beef
1 cup of chopped escarole
2 Tablespoons grated parmesan cheese
How To Prepare:
Mix ground beef with a dash of garlic powder, dash of salt, dash of pepper and 1 tablespoon of parmesan cheese, roll into small meatballs. Dice or slice chicken cutlet. Bring chicken broth to a boil, add meatballs, chicken and chopped escarole, simmer about 20 minutes. Beat the egg in a bowl with 1 T of paremsan cheese, stir into soup, simmer a few more minutes....serve
