Description: A yummy filling stew that can easily be adapted to include your fav veggies and tweaked to lower/raise carbs depending on your WOE.
Ingredients: Prep: 15 min
Cook: 8 hours on low
Serves: 6

1/4 cup olive oil
2 pds stew meat
1 med onion
1 14.5 oz can chickpeas
1 10oz bag frozen chooped spinach (thawed and water pressed out) I didn't do that, just threw it in frozen.
1/4 cup tom. paste
1 tsp black pepper
1 cube beef boullion
2.5 cups water (I added about 4 cups due to extra veggies.)

I also added:
3 stalks chopped celery
1 chopped carrot
How To Prepare: Use 1 tbs olive oil to grease cooker crock.
Heat remaining oil in large skillet. Add beef to skilled and brown. Drain liquid and add meat to crock.
Sautee onion, carrots, celery, and any other veggies you please for a few minutes.
Add this and all other ingredients to crock. Stir it up. Let it cook
