5 chicken quarters
2 bay leaves
2 chicken boullion cubes
3 carrots sliced
1/2 onion, chopped
water to cover
1 1/2 c. Bob's Red Mill Low Carb Baking Mix
2 tsp. baking powder
1/2 tsp. salt
1/2 c. milk
2 Tbs. butter
salt & pepper
How To Prepare:
Boil soup ingredients covered until chicken is done. Remove meat from bones and return to soup. Prepare dumpling ingredients by mixing dry and cutting in butter, then add moist. Bring to a rapid boil and drop dumpling batter into boiling soup by tablespoonfuls. Cover and don't touch until dumplings have set.
