Atkins Nutritionals - Year of Atkins 2005 calendar - May 10 Creamy Spinach Soup

2 boxes (10 oz each) frozen spinach, thawed
2 T butter
1 onion, finely chopped
3 T ThickenThin Not Starch Thickener
1/2 t ground nutmeg
1/2 t ground cumin
1 can (14 1/2 oz) reduced sodium chicken broth
1 soup can of water
1 clove garlic, pressed
1 cup heavy cream
salt and pepper
How To Prepare:
Squeeze excess moisture from spinach, blot with paper towels. Finely chop and set aside. In saucepan melt butter over med heat. Add onion, cook 3-4 minutes, until softened. Stir in thickener, nutmeg and cumin; mix until smooth. Add spinach, broth, water and garlic to saucepan. Mix well. Reduce heat to low and simmer 10 minutes. Add cream and cook on low until heated through. Season with salt and pepper.
