Description: Made this one weekend when playing around, and fell in love. Makes enough for 2 for a week of lunches. Very satisfying.
Ingredients: 3 med zucchini, diced
3 med yellow squash, diced
1 med onion, diced
1 yellow bell pepper, diced
3 cloves minced garlic
5 stalks celery, diced
1 pkg crimini mushrooms, sliced
2 pkgs chicken tenders, cut into bite sized pieces
Italian seasoning to taste (about 2 tbsp)
Salt and pepper to taste (I am quite liberal here)
3 qts. low sodium chicken broth
1 small carton heavy cream
olive oil/butter
How To Prepare: Melt butter into olive oil, and saute onion, zucchini, squash, garlic, pepper, celery, and mushrooms with salt, pepper, Itialian seasoning until tender. Add broth, bring to a boil, add chicken and simmer for 35 - 45 min until chicken is cooked through and tender. Stir in heavy cream (also works well with half and half, or nothing at all) and heat gently.

I also will toss a handful of fresh trimmed green beans in here, and sometimes frozen corn, if cooking for fiance (non low carb).
Number of Servings: I can get about 16 servings

I've never had chicken stew but I just made this and it is BAD.....sorry to the original poster but I don't want anyone to waste their time chopping all this stuff up.

Cons: Recipe is vague on measurements

I hope no one avoided this recipe because of one bad review. I found it easy to make, delicious and satisfying. There are problems with the way the recipe is written - how much chicken is "2 pkgs"??? I used 2 whole breasts (about a lb.), less zucchini and squash (only 1 each) and less broth (2 qts. is plenty). I also used a red pepper instead of yellow for its pretty color. I calculate the carbs to be about 45 gms. for the whole pot, minus about 7 gms. of fiber - outstanding!
